With many recent types praising head butcher Steve Colabella, it has become the place to go for those in the know. Steve has been written up by all the local papers because Mr. Colabella is a third generation butcher who always wanted to be a butcher! It was and is his calling. He has mastered the preparation and presentation of meat, one has called him the philosopher of meats, and he is also an excellent reference on how to prepare all the meats he cuts and sells. He welcomes questions.
Owner Bobby Corton has been surprised by how well his 'Cottage and Shepherd Pies' are selling. Years back in the East Village, Bobby and I tried pies made by one Howard O'Brien, who in addition to being a Harvard/Yale scholar was also an amazing cook. While in Ireland researching a school, Howard acquired some old pub secrets to make the best Shepherd's and Cottage pies. He eventually passed it on to Bobby Corton. Now Bobby prepared the pies daily on the premises. Bobby has lived in Southampton for the past 29 years. His vision for a successful Peconic Prime Meats butcher shop has now come to fruition. Located at 235 N. Sea Road in Southampton Village on the south side of Route 27.
For those wondering how pies are priced, you're in for a more pleasant surprise. Small Cottage Pies (beef) are $6.99 for a small and $12.99 for a large (serves 2). Original Shepherd Pies (lamb) are $9.99 for small and $19.99 for large.

Another part of Peconic Prime Meats' success is the on-site sausages that have won the praise of many locals. Bobby Corton proudly said, “Sausages are a specialty or chicken with always a variety. We also have everything for BBQ, including amazing strips and delicious Rib eyes! They don't deliver, but there is plenty of easy parking inside and outside.
Peconic Prime Meats is open 7 days a week. 10 am. to 5 p.m. Sunday through Wednesday and 10 a.m. to 6 p.m. Thursday to Saturday.
